Green And Red Tomato Chutney
Green and Red Tomato Chutney Recipe
Nothing quite captures the flavor of summer quite like a good chutney. Chutneys are a great way to preserve seasonal fruits, vegetables and herbs, and can be used in a variety of ways, from dips and spreads to sauces and marinades. Today, I’m sharing one of my favorite chutney recipes — Green and Red Tomato Chutney.
Ingredients
- 2 cups of green tomatoes, chopped
- 2 cups of red tomatoes, chopped
- 1/4 cup of white vinegar
- 1/4 cup of apple cider vinegar
- 1/2 cup of dark brown sugar
- 1/4 cup of tomato paste
- 1/2 teaspoon of ground coriander
- 1/2 teaspoon of ground cumin
- 1/2 teaspoon of ground turmeric
- 1/2 teaspoon of ground ginger
- 1/2 teaspoon of red pepper flakes
- 1 teaspoon of sea salt
- 1/2 cup of raisins (optional)
Instructions
Start by prepping your tomatoes. Peel them, remove the seeds, and then chop them into small pieces. Place the tomatoes in a medium-sized saucepan and set aside.
In a separate bowl, mix together the white vinegar, apple cider vinegar, dark brown sugar, tomato paste, and spices. Pour the mixture over the tomatoes and stir to combine. Bring the mixture to a gentle boil over medium-high heat, stirring regularly to prevent the sugar from burning.
Once boiling, reduce the heat to low and simmer for 30 to 45 minutes, stirring occasionally. The chutney should reduce and thicken. Add the raisins, if using, and simmer for another 10 minutes.
Remove the pan from the heat and let the chutney cool to room temperature. Once cooled, transfer the chutney to an airtight container and store in the refrigerator for up to a month.
Nutrition
This chutney is low in calories and fat, but high in fiber and vitamins A and C. It’s also a good source of potassium, magnesium, and iron. The spices used in this recipe also provide anti-inflammatory and antioxidant benefits.
Green and Red Tomato Chutney is a great way to add a lot of flavor to your dishes. It’s delicious on sandwiches, wraps, salads, and more. Try it as a dip with crackers or as a marinade for meat or vegetables. Enjoy!
