Instructions

Heat oil in a large pan over medium heat. Add the mustard seeds and cumin seeds and let them sizzle for a few seconds. Then, add the onions and sauté until they are softened and lightly browned. Add the garlic, green peppers, and tomatoes and sauté until the vegetables are softened. Now, add the red chilies, turmeric powder, coriander powder, garam masala, sugar, and salt and mix until all the ingredients are well combined. Cook the mixture for 5 minutes, stirring occasionally.

Once the mixture has cooked, turn off the heat and let it cool for a few minutes. Then, transfer the chutney to a blender or food processor and blend until it is smooth. Taste and adjust the seasoning as desired. Transfer the chutney to a bowl and garnish with freshly chopped cilantro.
