  • 250g self-raising flour

Instructions

Making the Suet Pastry



Begin by making the suet pastry. In a large bowl, mix the self-raising flour and shredded suet together. Make a well in the center, and pour in the cold water. With your hands, mix everything together until it forms a soft dough. Knead the dough for a few minutes until it’s smooth and pliable.

Rolling Out the Dough



Dust a work surface with a little flour, then roll the dough out until it’s about 0.5cm thick. Brush the melted butter over the surface of the dough, then spread the jam evenly over the top. Roll the dough up from the long side, like a Swiss roll, so that you end up with a log shape.

Cooking the Jam Roly Poly



Pre-heat the oven to 200°C/400°F/Gas Mark 6. Grease a baking tray with butter, then place the jam roly poly log onto the tray. Bake in the oven for 25-30 minutes, or until golden brown. Serve warm with custard, cream or ice cream. Enjoy!
