Ingredients
For the batter:
- 1 cup Gram Flour (Besan)
- 1 teaspoon Red Chilli Powder
- 1 teaspoon Turmeric Powder
- 1 teaspoon Garam Masala
- Salt to taste
- 1 teaspoon Lemon Juice
- 2 tablespoons Oil
- Water as required
For the stuffing:
- 3-4 Potatoes, boiled and mashed
- 1 teaspoon Mustard Seeds
- 2 tablespoons Peanuts, roasted and coarsely ground
- 2 Green Chillies, chopped
- 1 teaspoon Coriander Powder
- 1 teaspoon Cumin Powder
- 1 teaspoon Red Chilli Powder
- 1 teaspoon Turmeric Powder
- 1 teaspoon Garam Masala
- 2 tablespoons Coriander Leaves, chopped
- Salt to taste
- Oil for deep-frying
Instructions
To make the stuffing:
Heat 2 tablespoons of oil in a pan on medium heat. Add the mustard seeds and let them crackle for a few seconds. Then add the chopped green chillies and fry them for a few seconds. Now add the mashed potatoes and mix well. Add the coarsely ground peanuts, coriander powder, cumin powder, red chilli powder, turmeric powder, garam masala, and salt. Mix everything well and cook for 2-3 minutes. Add the chopped coriander leaves and mix. Take the stuffing off the heat and let it cool down.
To make the batter:
Take a bowl and add gram flour, red chilli powder, turmeric powder, garam masala, and salt. Mix everything together. Now add the lemon juice and oil and mix well. Slowly add water and whisk the mixture until it forms a thick batter. The batter should be neither too thick nor too thin.
To make the vadas:
Take a portion of the stuffing and flatten it into a disc shape. Take a portion of the batter and cover the stuffing with it. Make sure to completely cover the stuffing. Heat the oil in a deep-frying pan on medium heat. Gently drop the vadas into the hot oil and fry them until they turn golden brown. Take the vadas out of the oil and put them on a plate lined with a paper towel. Serve the Batata Vadas hot with green chutney, sweet tamarind chutney, and fried green chillies.
