Ingredients

Instructions
To begin making the Gajanan Vada Pav Chutney, start by boiling the potatoes. Once the potatoes have boiled, peel and mash them. In a separate pan, heat the oil and add the cumin seeds and mustard seeds. When the seeds start to sizzle, add the chopped onions, green chillies and sauté for a few minutes. Add the mashed potatoes and mix well.
Next, add the turmeric powder, red chilli powder, coriander leaves, tamarind paste and salt to taste. Mix everything together and cook for a few minutes. Once the mixture has cooked, remove from the heat and set aside.
To make the chutney, grind all the ingredients together in a food processor or blender. Once everything is ground together, transfer the chutney to a bowl and set aside.
To assemble the Gajanan Vada Pav Chutney, take a small portion of the potato mixture and shape it into a round patty. Heat a few drops of oil in a pan and place the patty in the pan. Cook the patty on both sides until it is golden brown.
