Ingredients
- For the cake:
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1/2 teaspoon salt
- 3/4 cup butter, softened
- 1 1/2 cups sugar
- 2 eggs
- 1 teaspoon vanilla extract
- 1 cup buttermilk
- For the frosting:
- 1/2 cup butter, softened
- 1 cup Nutella
- 2 cups powdered sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 1/4 cup heavy cream
- For the cake assembly:
- 1 cup chopped hazelnuts
- 1 (14 oz) package Ferrero Rocher chocolates
Instructions
Making the cake:
Preheat oven to 350°F. Grease two 8-inch round cake pans and line the bottoms with parchment paper. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, beat the butter and sugar together with an electric mixer until light and fluffy. Add the eggs, one at a time, beating until combined. Stir in the vanilla extract. Add the flour mixture, alternating with the buttermilk, beginning and ending with the flour, and mix until just combined.
Divide the batter evenly between the two prepared pans. Bake for 25-30 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool completely before assembling.
Making the frosting:
In a large bowl, beat the butter and Nutella together with an electric mixer until smooth. Add the powdered sugar, salt, and vanilla extract, and beat until combined. Add the heavy cream and beat until light and fluffy. Set aside.
Assembling the cake:
Place one of the cooled cakes on a cake stand or serving plate. Spread 1/3 of the frosting over the cake. Sprinkle with 1/2 cup of chopped hazelnuts. Place the second layer of cake on top and spread the remaining frosting over the top and sides. Garnish with remaining hazelnuts and Ferrero Rocher chocolates.
