Nigella Coffee And Walnut Cake
Ingredients
This indulgent cake is one of Nigella Lawson's signature dishes and it is so simple to make. To make this delicious cake you will need the following ingredients: 150g of self-raising flour, 150g of caster sugar, 150g of butter, 3 eggs, 1 teaspoon of vanilla extract, 1 teaspoon of instant espresso powder, 4 tablespoons of milk and 75g of walnuts.
Instructions
Firstly, preheat your oven to 160°C/320°F/Gas Mark 3. Grease and line an 8-inch round cake tin. In a large bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time, adding a spoonful of flour with each so that the mixture doesn't curdle. Add the remaining flour, espresso powder and vanilla extract, and mix until well combined. Finally, stir in the milk and walnuts.
Spoon the mixture into the prepared tin, and bake in the preheated oven for 45 minutes, or until a skewer inserted into the centre of the cake comes out clean. Leave the cake in the tin for 10 minutes before turning out onto a wire rack to cool.
Decoration
This cake is delicious as it is but if you want to dress it up a bit you can top the cake with coffee-flavoured buttercream. To make this, beat together 125g of butter and 250g of icing sugar with 2 tablespoons of instant espresso powder and a splash of milk. Spread the buttercream over the top of the cooled cake and scatter with walnut pieces.
