BBC Coffee and Walnut Cake
Ingredients
The ingredients for this delicious cake include: 175g softened butter, 175g caster sugar, 3 large eggs, 175g self-raising flour, 1 teaspoon baking powder, 50g chopped walnuts, 2 tablespoons instant coffee granules, 2 tablespoons warm water, 4 tablespoons apricot jam, and 150g icing sugar.
Instructions
Start by preheating the oven to 180C/350F/Gas 4. Grease and line two 20cm/8in sandwich tins. Beat the butter and sugar together in a bowl until light and fluffy. Add the eggs one at a time, beating well after each addition. Sift the flour and baking powder and fold into the mixture. Add the walnuts and mix until combined. Dissolve the coffee granules in the warm water and add to the mixture. Divide the mixture between the tins and bake in the oven for 25 minutes, or until an inserted skewer comes out clean. Leave to cool in the tins for 10 minutes, then turn out onto a wire rack to cool completely.
To Assemble
Once the cakes are completely cooled, spread the apricot jam over the base of one of the cakes. Place the other cake on top. Sift the icing sugar into a bowl, add 2 tablespoons of water and mix until smooth. Spread the icing onto the top of the cake. Serve the cake in slices.
