- 3 ripe bananas
- 1/3 cup coconut oil
- 1/2 cup pure maple syrup
- 1 teaspoon vanilla extract
- 1 cup whole wheat flour
- 1 teaspoon baking soda
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cardamom
- 1/2 teaspoon sea salt
- 1/2 cup chopped walnuts (optional)
Instructions
- Preheat the oven to 350°F (180°C) and grease a 9x5-inch (23x13-cm) loaf pan.
- In a large bowl, mash the bananas with a fork. Stir in the coconut oil, maple syrup, and vanilla.
- In a separate bowl, whisk together the flour, baking soda, cinnamon, nutmeg, cardamom, and salt.
- Add the dry ingredients to the wet ingredients and stir until just combined. Fold in the walnuts, if using.
- Pour the batter into the prepared pan and bake for 40 to 45 minutes, or until a toothpick inserted into the center comes out clean.
- Remove the pan from the oven and let cool for at least 10 minutes before slicing.
