Cape Malay Malva Pudding Recipe
Malva pudding is an iconic South African dessert. Originating in the Cape Malay culture, it has now become a favorite dessert in South Africa. It is a rich, spongy cake filled with apricot jam and topped with a warm, sweet sauce. It is best served with a scoop of vanilla ice cream or cream.
Ingredients
- 2 tablespoons butter
- 1 cup sugar
- 1 teaspoon baking powder
- 2 eggs
- 1 cup all-purpose flour
- 1 teaspoon bicarbonate of soda
- 1/2 cup milk
- 1/4 cup apricot jam
- 1/2 teaspoon cream of tartar
Instructions
Preheat the oven to 350 degrees Fahrenheit. Grease a 9-inch round cake pan and set aside.
In a medium bowl, cream together the butter and sugar until light and fluffy. Beat in the eggs one at a time. In a separate bowl, combine the flour, baking powder, bicarbonate of soda, and cream of tartar. Add the dry ingredients to the creamed mixture and mix until just combined.
Add the milk and beat until smooth. Spread the batter into the prepared pan and spoon the apricot jam over the top. Bake for 30 minutes, or until a toothpick inserted into the center comes out clean.
While the pudding is baking, make the sauce. In a medium saucepan, combine 1/2 cup of sugar, 1/2 cup of butter, and 1/2 cup of cream. Bring to a boil over medium heat, stirring constantly. Reduce the heat and simmer for 5 minutes, stirring occasionally.
Remove the pudding from the oven and pour the sauce over the top. Allow to cool for 10 minutes before serving.
