• 1 teaspoon of ground paprika
• 1 tablespoon of red curry paste
• 1 can of coconut milk
• 1 lb. of large shrimp, peeled and deveined
• 2 tablespoons of fish sauce
• 1 tablespoon of brown sugar
• 2 tablespoons of freshly chopped cilantro
• Salt and pepper to taste

Instructions



1. Heat the oil in a large skillet over medium heat. When the oil is hot, add the onion and sauté until it is softened and lightly browned, about 5 minutes.

2. Add the garlic, ginger, coriander, cumin, turmeric, and paprika to the skillet and cook for another minute, stirring to combine.

3. Add the curry paste and stir until it is fully incorporated.

4. Pour the coconut milk into the skillet and bring the mixture to a simmer.

5. Add the shrimp and cook until they are just barely cooked through, about 3 minutes.

6. Add the fish sauce, brown sugar, and cilantro and stir to combine.

7. Taste and season with salt and pepper as needed.

8. Serve the curry over cooked jasmine rice and enjoy!
