Ingredients
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ¾ cup white sugar
- 1 teaspoon salt
- 2 eggs
- 1 cup milk
- 2 tablespoons butter, melted
- ½ cup apricot jam
- ½ cup butter
- ½ cup white sugar
- 1 teaspoon bicarbonate of soda
- ¼ cup boiling water
Instructions
Preheat the oven to 350°F (175°C). Grease an 8-inch (20 cm) square baking pan. In a medium bowl, combine the flour, baking powder, sugar, and salt. Set aside.
In a large bowl, beat the eggs until light and fluffy. Add the milk and melted butter, and mix together. Gradually add the dry ingredients, mixing until just blended. Spread the batter into the prepared pan and spread the apricot jam over the top.
In a medium saucepan, combine the butter, sugar, bicarbonate of soda, and boiling water. Cook over low heat, stirring constantly, until the mixture thickens. Pour the sauce over the pudding and bake for 35 minutes, or until a toothpick inserted into the center comes out clean.
