Ingredients
For the Koftas:
- 2 cups boiled mashed potatoes
- 1 cup grated cheese
- 1/2 cup finely chopped onions
- 1 teaspoon garlic paste
- 2 tablespoons chopped fresh coriander leaves
- 1 teaspoon cumin powder
- 1 teaspoon garam masala
- 1/2 teaspoon red chilli powder
- Salt to taste
- Oil for deep frying
For the Sauce:
- 1 tablespoon oil
- 2 cloves garlic, chopped
- 1/2 teaspoon cumin seeds
- 1/2 teaspoon mustard seeds
- 1 cup tomato puree
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1/2 teaspoon red chilli powder
- 1/2 cup fresh cream
- Salt to taste
- 1 tablespoon freshly chopped coriander leaves
Instructions
Making the Koftas
In a large bowl, mix together the mashed potatoes, grated cheese, onions, garlic paste, coriander leaves, cumin powder, garam masala, red chilli powder and salt. Mix well to form a soft dough. Take a small portion of the dough and shape it into a ball. Flatten the ball slightly and deep fry in hot oil till golden brown. Repeat this process with the remaining dough to make more koftas.
Making the Sauce
Heat oil in a pan and add the garlic, cumin seeds and mustard seeds. When the seeds start to splutter, add the tomato puree and cook for 2-3 minutes. Add the coriander powder, garam masala, red chilli powder and salt. Cook for another 2-3 minutes. Add the cream and cook for a few minutes. Add the fried koftas to the sauce and cook for 5 minutes. Garnish with freshly chopped coriander leaves.
Serving
Serve the Malai Kofta with steamed basmati rice or naan.
