Malai Kofta Recipe With Khoya



Malai Kofta is one of the most popular dishes in India. It is a delicious vegetarian dish made with mashed potatoes, paneer and khoya (evaporated milk solids). The dish is cooked in a rich and creamy gravy made with tomatoes, onions, and a variety of spices. The dish is often served with steamed rice or roti.

Ingredients



For the koftas:
  • 4 potatoes, boiled and mashed
  • 1/2 cup paneer (cottage cheese), grated
  • 1/4 cup khoya (evaporated milk solids), grated
  • 2 tablespoons cilantro, finely chopped
  • 1 teaspoon cumin powder
  • 1/2 teaspoon garam masala
  • 1 teaspoon red chilli powder
  • Salt to taste
  • Oil for deep frying


For the gravy:
  • 2 tablespoons ghee (clarified butter)
  • 2-3 cloves
  • 2 green cardamom
  • 1 inch cinnamon stick
  • 1 bay leaf
  • 2 onions, finely chopped
  • 2 tomatoes, finely chopped
  • 1 teaspoon ginger-garlic paste
  • 1 teaspoon cumin powder
  • 1 teaspoon coriander powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon red chilli powder
  • 1/4 cup cream
  • Salt to taste

Instructions

To make the koftas:

In a large bowl, mix together the mashed potatoes, grated paneer, grated khoya, cilantro, cumin powder, garam masala, red chilli powder and salt. Mix everything together until well combined. Divide the mixture into small balls and keep aside.

Heat the oil in a deep-frying pan. When the oil is hot, add the kofta balls and deep fry until golden brown. Remove the koftas from the oil and keep aside.

To make the gravy:

Heat the ghee in a large pan. Add the cloves, cardamom, cinnamon stick, and bay leaf and sauté for a few seconds. Add the onions and fry until golden brown. Add the tomatoes and ginger-garlic paste and fry until the tomatoes are soft and pulpy.

Add the cumin powder, coriander powder, garam masala, red chilli powder, and salt and mix well. Add 1/2 cup of water and bring to a boil. Reduce the heat and simmer for 10 minutes or until the gravy thickens.

Add the cream and mix well. Add the fried koftas and simmer for 2-3 minutes. Remove from heat and serve hot.
