Malai Kofta: The Perfect Indian Restaurant Style Recipe

  • 2 cups grated paneer
  • 1 cup mashed boiled potatoes

  • 1 teaspoon red chilli powder
  • 1 teaspoon cumin powder
  • 1 teaspoon garam masala powder
  • 1/2 teaspoon turmeric powder
  • 1 tablespoon corn flour
  • Salt to taste
  • Oil for deep frying

Instructions

  • In a large bowl, combine the grated paneer, mashed potatoes, coriander leaves, ginger-garlic paste, red chilli powder, cumin powder, garam masala powder, turmeric powder, corn flour and salt. Mix everything together well and knead into a soft dough.
  • Divide the dough into equal parts and shape them into small balls. Heat the oil in a deep frying pan and deep fry the koftas until they are golden brown.
  • To make the gravy, heat 2 tablespoons of oil in a pan. Add 1 teaspoon of ginger-garlic paste and 1 teaspoon of red chilli powder. Saute for a few minutes until the spices are fragrant.
  • Add 1 cup of tomato puree and 1 teaspoon of cumin powder. Cook for a few minutes until the gravy thickens.
  • Add 1 teaspoon of garam masala powder and 1/2 teaspoon of turmeric powder. Mix everything together and let the gravy simmer for 5-10 minutes.
  • Add the fried koftas to the gravy and simmer for few minutes. Garnish with fresh coriander leaves and serve hot.
