Ingredients
For the koftas:
- 2 large potatoes, boiled and mashed
- 2 cups grated paneer
- 2 tablespoons chopped green chillies
- 2 tablespoons finely chopped ginger
- 2 tablespoons cornflour
- Salt to taste
- Oil for deep-frying
For the gravy:
- 2 tablespoons butter
- 2 tablespoons oil
- 2 onions, finely chopped
- 2 tomatoes, pureed
- 2 teaspoons ginger-garlic paste
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon red chilli powder
- ½ teaspoon garam masala
- 2 tablespoons cashew nut paste
- 2 tablespoons cream
- 2 tablespoons chopped coriander leaves
- Salt to taste
Instructions
1. To make the koftas, mix together the mashed potatoes, grated paneer, coriander leaves, green chillies, ginger, cornflour, and salt in a bowl.
2. Divide the mixture into 12 equal portions and shape into balls. Flatten the balls slightly and set aside.
3. Heat sufficient oil in a kadai and deep-fry the koftas over medium heat until golden and crisp. Drain on absorbent paper and keep aside.
4. To make the gravy, heat butter and oil in a pan. Add the onions and sauté over medium heat for 2-3 minutes.
5. Add the tomato puree, ginger-garlic paste, cumin powder, coriander powder, red chilli powder, garam masala and salt. Cook for a few minutes until the oil begins to separate from the sides of the pan.
6. Add the cashew nut paste and mix well. Add 1 cup of water and bring to a boil. Reduce the heat, cover and simmer for 5 minutes.
7. Add the cream, mix well and cook for a few minutes.
8. Add the fried koftas to the gravy and simmer for 2-3 minutes.
9. Garnish with coriander leaves and serve hot with roti, naan, or paratha.
