- 2 potatoes, boiled and mashed
- 1 cup paneer (or cottage cheese), grated
- 2 tablespoons of plain flour
- 1 teaspoon of garam masala
- 1 teaspoon of red chilli powder
- 1 teaspoon of cumin powder
- 1 teaspoon of coriander powder
- 1/2 teaspoon of turmeric powder
- 1 teaspoon of crushed kasuri methi (dried fenugreek leaves)
- 2 tablespoons of fresh cream
- 1 tablespoon of oil
- 1 teaspoon of cumin seeds
- 1 onion, finely chopped
- 1 teaspoon of ginger garlic paste
- 2 tomatoes, chopped
- 1/2 teaspoon of sugar
- Salt to taste
- 1/2 cup of water
- Fresh coriander leaves for garnish
Instructions
To make the Malai Kofta, start by mixing together the mashed potatoes, grated paneer, plain flour, garam masala, red chilli powder, cumin powder, coriander powder, turmeric powder, kasuri methi, cream, and salt to taste.
Mix all the ingredients together until you get a soft, pliable dough. Divide the dough into small portions and shape into balls. Heat the oil in a pan over medium flame and fry the koftas in batches until they are golden brown. Remove the koftas from the pan and keep aside.
In the same pan, add the cumin seeds and let them splutter. Add the chopped onion and sauté until it becomes translucent. Add the ginger garlic paste and cook for a few minutes. Add the chopped tomatoes and cook until the tomatoes are softened. Add the sugar and mix well.
Add the fried koftas to the pan and mix gently. Pour in the water and simmer for about 10 minutes or until the gravy thickens. Add the fresh cream and mix well. Garnish with the fresh coriander leaves and serve warm with roti, naan, or paratha.
