Ingredients

Instructions
Preheat your oven to 350 degrees Fahrenheit (175 degrees Celsius). Grease and flour a 9-inch round cake pan. In a medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, nutmeg, and salt. In a large bowl, whisk together the eggs, sugars, oil and vanilla extract until combined. Gradually add in the dry ingredients and mix until just combined. Fold in the carrots, pecans and pineapple, if desired. Pour the batter into the prepared cake pan and bake for 35-40 minutes, until a toothpick inserted in the center of the cake comes out clean. Allow the cake to cool for 10 minutes before turning it out of the pan onto a wire rack to cool completely.
