Ingredients

This amazing Chicken and Leek Pie is one of the easiest and most delicious dishes that you can make. All you need are the following ingredients:

  • 2 tablespoons of butter
  • 2 tablespoons of olive oil
  • 2 cloves of garlic, minced
  • 2 leeks, sliced
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • 2 large chicken breasts, cut into cubes
  • 2 tablespoons of all-purpose flour
  • 1 cup of chicken broth
  • 1/2 cup of half-and-half cream
  • 1/2 cup of frozen peas
  • 1 package of puff pastry, thawed
  • 1 egg, beaten

Instructions

To make this delicious Chicken and Leek Pie, start by preheating your oven to 375 degrees F. Then, heat the butter and oil in a large skillet over medium heat. Add in the garlic and leeks and sauté for about 5 minutes, until the leeks are soft and beginning to brown. Add in the thyme and rosemary and cook for an additional minute.

Next, add the chicken cubes to the skillet and cook until they are cooked through, about 8 minutes. Sprinkle the flour over the chicken and vegetables and stir to combine. Cook for an additional minute, stirring constantly. Then, add in the chicken broth and cream and stir to combine. Simmer for 5 minutes, until the sauce has thickened. Stir in the peas and season with salt and pepper, to taste.

Transfer the chicken and leek mixture to a 9-inch pie dish. Place the puff pastry over the top and tuck the edges of the pastry into the dish, pressing down slightly. Brush the top of the pastry with the beaten egg and cut 3-4 slits in the top of the pastry. Bake for 25-30 minutes, until the pastry is golden brown and the filling is bubbling.

Allow the pie to cool for 5-10 minutes before serving. Enjoy!
