Chicken And Leek Filo Pie Recipe

Ingredients

Making this delicious Chicken and Leek Filo Pie is a breeze with these simple ingredients:

  • 2 tablespoons of butter
  • 2 leeks, thinly sliced
  • 2 cloves of garlic, minced
  • 2 cups of cooked and shredded chicken
  • 1 cup of cooked mushrooms, sliced
  • 1/2 cup of cooked ham, diced
  • 1/3 cup of all-purpose flour
  • 1 cup of chicken broth
  • 1/2 cup of heavy cream
  • 1/2 teaspoon of dried thyme
  • Salt and freshly ground black pepper, to taste
  • 1/4 cup of freshly grated Parmesan cheese
  • 1/4 cup of chopped fresh parsley
  • 1/2 cup of frozen peas, thawed
  • 6 sheets of filo pastry
  • 2 tablespoons of melted butter

Instructions

Preheat oven to 375 degrees F (190 degrees C). Grease a 9-inch pie plate with butter.

In a large skillet, melt the butter over medium-high heat. Add the leeks and garlic, and cook until tender, about 5 minutes. Add the chicken, mushrooms, and ham, and cook until the chicken is cooked through, about 5 minutes.

Sprinkle the flour over the chicken mixture, and stir to combine. Add the chicken broth, cream, and thyme, and stir until thickened, about 3 minutes. Season with salt and pepper, to taste. Stir in the Parmesan cheese, parsley, and peas. Transfer the mixture to the prepared pie plate.

Lay the filo sheets on a clean work surface. Brush each sheet lightly with melted butter, and layer the sheets on top of the pie. Cut off any excess pastry, and tuck the edges of the pastry into the sides of the pie plate. Brush the top of the pastry with the remaining melted butter.

Bake in preheated oven until the pastry is golden brown, about 30 minutes. Let cool before serving.
