Anzac Biscuits Recipe Donna Hay
Ingredients
These delicious Anzac biscuits are based on Donna Hay's classic recipe. To make your own Anzac biscuits, you'll need the following ingredients: 110 g (3.9 oz) rolled oats, 60 g (2.1 oz) plain (all-purpose) flour, 55 g (1.9 oz) desiccated coconut, 85 g (3.0 oz) brown sugar, 100 g (3.5 oz) butter, 1 tablespoon golden syrup (or maple syrup), 1/2 teaspoon bicarbonate of soda (baking soda), and 2 tablespoons boiling water.
Instructions
Preheat oven to 160°C (320°F). Line two baking trays with baking paper. In a medium bowl, mix the oats, flour, coconut, and brown sugar. In a small saucepan, melt the butter and golden syrup together. In a small cup, mix the bicarbonate of soda and boiling water together. Add the butter mixture to the oat mixture and stir until combined. Add the bicarbonate of soda mixture and stir until well combined. Using a tablespoon, scoop the mixture onto the baking trays, leaving a few centimeters between each biscuit. Bake for 15 minutes or until golden. Allow to cool on the trays.
Serving
These delicious Anzac biscuits are best served with a mug of hot tea or coffee. They can also be enjoyed as a snack or as part of a dessert. If you're feeling adventurous, you can even experiment with different flavours – try adding dried fruit, nuts or spices for an extra twist.
Storage
Anzac biscuits can be stored in an airtight container for up to a week. They can also be frozen for up to three months. If you're freezing them, be sure to wrap them individually in cling wrap to prevent them from sticking together.
