Instructions
Preheat the oven to 425 degrees F. Grease a 9-inch pie dish and set aside.
In a large skillet, heat the olive oil over medium-high heat. Add the leek and garlic and cook until softened, about 5 minutes. Add the flour and stir to combine. Add the chicken broth and stir to combine. Simmer until the mixture thickens, about 5 minutes. Remove from the heat and stir in the chicken and thyme. Season with salt and pepper to taste.
Add the butter to the skillet and stir until melted. Add the cream and stir to combine. Pour the mixture into the prepared pie dish.
Lay the thawed puff pastry over the mixture and press down the edges to seal. Cut a few slits in the top of the pastry to allow steam to escape. Brush the top of the pastry with the beaten egg and sprinkle with sesame seeds. Bake for 30 minutes, or until golden brown.
