Ingredients
This delicious and unique dahi vada recipe by Sanjeev Kapoor will make for a great snack or appetizer. The main ingredients for this recipe are split black gram (urad dal), yogurt, tamarind, green chillis, red chilli powder, coriander powder, cumin powder, asafoetida and salt. You will also need some oil for frying the vadas and some coriander leaves for garnishing.
The split black gram should be soaked in water for at least 4 hours before making the vadas. You can also use ready-made split black grams that are readily available in the market. The yogurt should be thick and creamy and should not be watery. You can use either plain or curdled yogurt for this recipe.
The tamarind should be soaked in water and then strained before using it in the recipe. The green chillis can be adjusted according to your taste. The red chilli powder, coriander powder, cumin powder, asafoetida, and salt should be added in the right proportions for the best taste. You can use vegetable oil for frying the vadas.
Instructions
In a large bowl, add the split black gram that has been soaked in water for 4 hours. Mash the black gram with your hands until it forms a smooth paste. Add some water if required and mix it together. Now add the yogurt, tamarind, green chillis, red chilli powder, coriander powder, cumin powder, asafoetida and salt. Mix everything together until it forms a thick paste.
Heat the oil in a deep-frying pan. Take small portions of the mixture and form it into round balls. Now carefully drop the balls into the hot oil and fry until they are golden brown on both sides. Take them out of the oil and place them on a plate lined with paper towels to absorb the excess oil.
In a bowl, add some beaten yogurt, tamarind, red chilli powder, and salt. Mix everything together until it forms a thick sauce. Now take the fried vadas and dip them in the yogurt sauce. Garnish with some chopped coriander leaves and serve them hot.
