Ingredients

- 1 tablespoon vegetable oil

- 1 teaspoon sugar
- 1 teaspoon chaat masala powder
- 2 tablespoons chopped coriander leaves
- 2 cups water for soaking
- Oil for deep frying
Instructions
First, wash and soak the urad dal in a bowl of water for 2-3 hours. Then drain the water and grind the dal into a paste. To the paste, add the rice flour, cumin seeds, salt, red chilli powder, ginger paste and yoghurt. Mix the ingredients until it forms a thick paste. Add the water and mix it well. Heat the oil in a pan and add the mustard seeds, curry leaves, asafoetida and sugar. Add the paste to the pan and mix it well. Cook the paste for 5-7 minutes, stirring continuously. Then, take the pan off the heat and let the mixture cool down.
Now, shape the mixture into small, round balls. Heat the oil in a kadhai and deep fry the balls until they turn golden brown. Take the vadas out of the oil and soak them in a bowl of water for 15 minutes. This helps to remove the excess oil. Drain the water and transfer the vadas to a serving plate. Pour the yogurt over the vadas and sprinkle some chaat masala powder and chopped coriander leaves. Serve the Dahi Vada with chutney or ketchup.
