Ingredients

- 1 teaspoon thyme
- 2 bay leaves
- Salt and pepper to taste
- 400 g puff pastry
- 1 egg, beaten
Instructions
Heat the olive oil in a large saucepan over medium-high heat. Add the onions and garlic and cook until softened, about 5 minutes. Add the tomato paste and cook for an additional minute. Add the beef and cook until lightly browned, about 5 minutes. Stir in the flour and cook for an additional minute.
Add the beef stock, ale, thyme, bay leaves, salt and pepper to the pan. Reduce the heat to low, cover, and cook for 1 hour, stirring occasionally. Preheat the oven to 200C.
Roll out the puff pastry to a thickness of 3mm. Cut out two circles slightly larger than your pie dish. Place one of the circles in the bottom of the pie dish. Fill the pie dish with the beef mixture. Place the second pastry circle on top of the filling and press the edges together to seal. Cut several slits in the top of the pastry. Brush the top with the beaten egg.
Bake in the preheated oven for 25-30 minutes, or until the pastry is golden brown. Serve hot.
