Ingredients
For the cake:
- 225g/8oz butter, softened
- 225g/8oz caster sugar
- 4 eggs
- 225g/8oz self-raising flour
- 2 tablespoons milk
- 1 teaspoon vanilla extract
- Grated zest of 1 lemon
For the drizzle topping:
- Juice of 1 lemon
- 100g/4oz caster sugar
Instructions
Preheat the oven to 180°C/gas 4/350°F. Grease and line the base and sides of a 20cm/8 inch round cake tin.
Cream together the butter and sugar until light and fluffy. Add the eggs one at a time, beating well after each addition. Sift in the flour and fold in with a metal spoon. Add the milk, vanilla extract and lemon zest, and combine until everything is mixed together. Spoon the mixture into the prepared tin and spread evenly.
Bake for 35 minutes until golden and an inserted skewer comes out clean. Leave to cool in the tin for 10 minutes before turning out onto a wire rack to cool completely.
To make the drizzle topping, mix together the lemon juice and sugar in a small bowl. When the cake is cool, spoon the drizzle over the top of the cake. Leave to set before serving.
