Biscoff Cake
Ingredients
For the cake, you will need: one and a half cups of all-purpose flour, one teaspoon baking powder, one teaspoon baking soda, one teaspoon ground cinnamon, half a teaspoon of salt, one and a half sticks of unsalted butter (softened), one cup light brown sugar, two large eggs, one cup Biscoff spread, one teaspoon vanilla extract and one cup of buttermilk. For the frosting, you will need: three sticks of unsalted butter (softened), six cups of powdered sugar, one teaspoon vanilla extract, one cup Biscoff spread and one tablespoon of heavy cream.
Instructions
Preheat your oven to 350°F and grease two 9-inch cake pans with butter or cooking spray. In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon and salt. In a separate bowl, cream together the butter and brown sugar until light and fluffy. Add the eggs one at a time and beat until combined. Add the Biscoff spread and vanilla extract and mix until fully combined. Add the dry ingredients to the wet ingredients and mix until just combined. Add the buttermilk and mix until smooth. Divide the batter between the two cake pans and bake for 30-35 minutes or until a toothpick inserted in the center comes out clean. Let the cakes cool in the pans for 10 minutes before turning out onto a cooling rack to cool completely.
To make the frosting, cream together the butter and powdered sugar until light and fluffy. Add the vanilla extract, Biscoff spread and heavy cream and mix until combined. Spread the frosting between the two cake layers and on the top and sides of the cake. Serve and enjoy!
