- 2 pounds boneless, skinless chicken thighs
- 1 tablespoon garam masala
- 1 teaspoon ground cumin
- ½ teaspoon ground coriander
- 2 tablespoons olive oil
- 1 onion, diced
- 4 cloves garlic, minced
- 2 tablespoons freshly grated ginger
- 2 teaspoons smoked paprika
- 1 teaspoon turmeric
- 1 teaspoon salt
- 1 (14.5 ounce) can diced tomatoes
- ¼ cup heavy cream
- 3 tablespoons butter
- 2 tablespoons freshly chopped cilantro
- Juice of ½ lemon
Instructions
1. In a medium bowl, combine the chicken thighs with the garam masala, cumin, and coriander. Toss to coat the chicken evenly.
2. Set the Instant Pot to “Sauté” and add the olive oil. Once the oil is hot, add the chicken and cook for 3-4 minutes, stirring occasionally. Once the chicken has browned, remove it from the pot and set aside.
3. Add the onion, garlic, and ginger to the pot, and sauté for 2-3 minutes, stirring often. Next, stir in the smoked paprika, turmeric, and salt. Then, add the diced tomatoes and stir to combine.
4. Return the chicken to the pot and stir to combine. Close the lid and set the Instant Pot to “Manual” for 10 minutes. Once the timer is up, let the pressure release naturally for 10 minutes before carefully opening the lid.
5. Finally, add the heavy cream, butter, cilantro, and lemon juice. Stir to combine and let the sauce simmer for 2-3 minutes. Serve the butter chicken with basmati rice and naan bread.
