Ingredients

Making a delicious two-layer vanilla cake at home does not have to be a difficult task. This recipe from BBC Good Food is perfect for any occasion. All you need is butter, sugar, eggs, self-raising flour, and vanilla extract. To start, preheat your oven to 350 degrees Fahrenheit and grease two 8-inch cake tins.

In a large bowl, mix together 225g of softened butter and 225g of caster sugar until creamy. Next, add four eggs one at a time, beating well after each addition. Sift 225g of self-raising flour and a pinch of salt into the mixture and fold in. Finally, stir in 1 teaspoon of vanilla extract.

Once all of the ingredients are well combined, divide the mixture between the two cake tins. Bake in the preheated oven for 25-30 minutes or until a skewer inserted into the center of each cake comes out clean. Leave the cakes to cool in the tin for 10 minutes before turning them out onto a wire rack to cool completely.

Instructions

Once the cakes are fully cooled, you can start to assemble the cake. Use a serrated knife to level the top of each cake. Place one layer onto a plate and spread a generous layer of jam or buttercream over the top. Place the second layer on top and use a palette knife to spread the remaining buttercream over the top and sides of the cake.

You can top the cake with fresh fruit, sprinkles, or chocolate curls. Alternatively, you can use a piping bag to pipe swirls of buttercream over the top. Serve the cake on its own or with a scoop of ice cream.
