Mary Berry's Lemon Verbena Drizzle Cake
Ingredients
This Lemon Verbena Drizzle Cake from Mary Berry is sure to be a hit with family and friends. To make this delicious cake you will need the following ingredients; 175g softened butter, 175g caster sugar, 3 large eggs, 175g self-raising flour, 2 teaspoons baking powder, 1 teaspoon grated lemon zest, 2 tablespoons lemon verbena leaves, finely chopped, plus extra to decorate, 4 tablespoons milk, and 2 tablespoons granulated sugar.
Instructions
To begin, preheat your oven to 180°C/fan 160°C/gas 4. Grease and line a 20cm round cake tin with baking parchment. In a bowl, cream the butter and sugar until light and fluffy using an electric whisk. Then add the eggs, one at a time, whisking well after each addition. Sift in the flour and baking powder and fold into the mixture with a metal spoon. Next, add the lemon zest and chopped lemon verbena leaves and mix until combined. Finally, add the milk and mix again. Pour the mixture into the prepared tin and bake for 25-30 minutes, or until golden and a skewer inserted into the centre comes out clean.
Once cooked, leave the cake to cool in the tin for 10 minutes before transferring to a wire rack to cool completely. To make the drizzle topping, place the granulated sugar and 3 tablespoons of water in a saucepan and bring to the boil over a medium heat. Reduce the heat to low and simmer for 4 minutes. Take the pan off the heat, stir in the remaining lemon verbena leaves and leave to cool for 10 minutes. Prick the cake all over with a skewer and pour the syrup over the top. Sprinkle with extra verbena leaves and leave to cool. Serve the cake in slices with a dollop of cream or ice cream.
