Chhole Bhature Recipe
Chhole Bhature is a popular North Indian cuisine which is a combination of two flavorful dishes - chhole and bhature. Chhole is a spicy and tangy chickpea curry and bhature is a deep-fried Indian flatbread. This dish is a favorite among all age groups and is a popular street food in India. It is usually served with pickled onions, achar, and chutneys.
Ingredients
For the Chhole:
- 1 cup chickpeas (kabuli chana)
- 2 tablespoons oil
- 1 teaspoon cumin seeds (jeera)
- 1 teaspoon ginger-garlic paste
- 1 onion, finely chopped
- 1 tomato, finely chopped
- 1 teaspoon coriander powder (dhania powder)
- 1 teaspoon red chilli powder
- 1 teaspoon garam masala
- Salt to taste
- 2 tablespoons coriander leaves, chopped
For the Bhature:
- 1 cup maida (all-purpose flour)
- 1 tablespoon sooji (semolina)
- 1 teaspoon sugar
- 1 teaspoon baking powder
- Salt to taste
- Oil for deep-frying
Instructions
For the Chhole:
- Soak the chickpeas overnight in enough water.
- Drain the water and pressure cook the chickpeas for 3-4 whistles.
- Heat oil in a pan and add cumin seeds.
- When the seeds start crackling, add ginger-garlic paste and sauté for a few seconds.
- Add onion and sauté till it turns golden brown.
- Add tomato and cook till the tomato is soft and mushy.
- Add coriander powder, red chilli powder, garam masala and mix well.
- Add the cooked chickpeas and mix well.
- Add salt to taste and mix well.
- Add 2-3 tablespoons of water and cook for 3-4 minutes.
- Garnish with coriander leaves and serve hot.
For the Bhature:
- Take maida, sooji, sugar, baking powder and salt in a bowl.
- Add water gradually and knead into a soft and smooth dough.
- Cover the dough with a damp cloth and set aside for 15-20 minutes.
- Divide the dough into equal portions and roll out each portion into a thick disc.
- Heat sufficient oil in a kadai and deep-fry the discs till golden brown.
- Serve hot with chhole.

Chhole Bhature is a delicious and nutritious dish which is full of proteins, vitamins, and minerals. Chickpeas are a good source of protein and dietary fibre. Bhature is made with maida which provides carbohydrates. This dish also contains a good amount of iron and calcium which makes it a wholesome meal.
