Authentic Spanish Chicken and Chorizo Paella Recipe
Paella is one of Spain’s most iconic dishes, and it’s no surprise that it’s become a favorite all over the world. This classic paella recipe is packed with flavor, thanks to the combination of chicken, chorizo, and a variety of other ingredients. Ingredients
- 1 pound chicken, cut into 1-inch pieces
- 1/2 pound chorizo, cut into 1/2-inch slices
- 1 onion, diced
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 teaspoon paprika
- 1/2 teaspoon saffron threads
- 2 cups short-grain rice
- 3 cups chicken broth
- 1/2 cup peas
- 1/4 cup chopped parsley
- Salt and pepper, to taste
Instructions
Heat a large skillet over medium-high heat. Add the chicken and chorizo and cook, stirring occasionally, until the chicken is cooked through and the chorizo is lightly browned. Remove the chicken and chorizo from the skillet and set aside.
Reduce the heat to medium and add the onion, garlic, and bell pepper to the skillet. Cook, stirring occasionally, until the vegetables are softened, about 5 minutes. Add the paprika and saffron and cook for another minute.
Add the rice to the skillet and stir to coat with the vegetables. Pour in the chicken broth and bring to a simmer. Reduce the heat to low, cover the skillet, and cook for 15 minutes.
Uncover the skillet and add the chicken and chorizo, peas, and parsley. Stir to combine and cook until the rice is tender, about 10 minutes. Taste and season with salt and pepper, if desired.
Remove the skillet from the heat and let stand, covered, for 10 minutes. Serve warm.
