Chicken Mince and Rice Casserole



This easy and delicious casserole makes a great family meal. It’s simple to prepare and it can be made ahead of time and reheated when needed.

Ingredients:



- 1 tablespoon olive oil
- 1 onion, finely chopped
- 500g chicken mince
- 2 cloves garlic, crushed
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon ground coriander
- 1 teaspoon dried oregano
- 400g tinned chopped tomatoes
- 250g long grain rice
- 500ml chicken stock
- 2 tablespoons freshly chopped parsley

Instructions:



1. Preheat the oven to 180°C.
2. Heat the oil in a large pan over a medium heat. Add the onion and cook for 5 minutes, stirring occasionally, until softened.
3. Add the chicken mince and cook for 5 minutes, stirring often, until lightly browned.
4. Add the garlic, cumin, paprika, coriander, and oregano and cook for a further 1-2 minutes.
5. Add the tomatoes, rice, and chicken stock and bring to the boil. Reduce the heat and simmer gently for 15 minutes, stirring occasionally, until the rice is cooked and the liquid has been absorbed.
6. Transfer the mixture to an ovenproof dish and bake for 30 minutes.
7. Sprinkle with the parsley and serve.

Nutrition:



This recipe makes 4 servings and each serving provides approximately 563 kcal, 28.4g fat, 50.7g carbohydrates and 22.2g protein. It also provides a good source of fibre, vitamins and minerals.

Chicken Mince and Rice Bowls



These delicious and nutritious bowls are great for a quick and easy meal. You can prepare the ingredients in advance and assemble them when you’re ready to eat.

Ingredients:



- 2 tablespoons olive oil
- 1 onion, finely chopped
- 500g chicken mince
- 2 cloves garlic, crushed
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon ground coriander
- 2 tablespoons tomato paste
- 250g long grain rice
- 500ml chicken stock
- 2 tablespoons freshly chopped parsley
- 2 avocados, peeled and sliced
- 1 tin of sweetcorn, drained
- 4 tablespoons Greek yogurt
- 4 tablespoons freshly chopped coriander

Instructions:



1. Heat the oil in a large pan over a medium heat. Add the onion and cook for 5 minutes, stirring occasionally, until softened.
2. Add the chicken mince and cook for 5 minutes, stirring often, until lightly browned.
3. Add the garlic, cumin, paprika, coriander, and tomato paste and cook for a further 1-2 minutes.
4. Add the rice and chicken stock and bring to the boil. Reduce the heat and simmer gently for 15 minutes, stirring occasionally, until the rice is cooked and the liquid has been absorbed.
5. Divide the mixture between 4 bowls and top with the avocado, sweetcorn, yogurt, and coriander.
6. Sprinkle with the parsley and serve.
