Ingredients:
- 1 tablespoon olive oil
- 1 onion, finely chopped
- 500g chicken mince
- 2 cloves garlic, crushed
- 1 teaspoon ground cumin
- 1 teaspoon smoked paprika
- 1 teaspoon ground coriander
- 1 teaspoon dried oregano
- 400g tinned chopped tomatoes
- 250g long grain rice
- 500ml chicken stock
- 2 tablespoons freshly chopped parsley
Instructions:
1. Preheat the oven to 180°C.
2. Heat the oil in a large pan over a medium heat. Add the onion and cook for 5 minutes, stirring occasionally, until softened.
3. Add the chicken mince and cook for 5 minutes, stirring often, until lightly browned.
4. Add the garlic, cumin, paprika, coriander, and oregano and cook for a further 1-2 minutes.
5. Add the tomatoes, rice, and chicken stock and bring to the boil. Reduce the heat and simmer gently for 15 minutes, stirring occasionally, until the rice is cooked and the liquid has been absorbed.
6. Transfer the mixture to an ovenproof dish and bake for 30 minutes.
7. Sprinkle with the parsley and serve.
