Instructions

  1. In a large bowl, combine the mashed potatoes, mustard seeds, cumin seeds, green chilies, turmeric powder, coriander leaves, ginger-garlic paste and salt. Mix everything together until it forms a dough.
  2. Divide the dough into 8-10 equal portions. Take each portion and shape it into a round ball. Flatten the ball slightly and press it into the chickpea flour, making sure it is completely coated.
  3. Heat 2 tablespoons of oil in a deep-frying pan over medium heat. Carefully slide the vadas into the hot oil and fry until it becomes golden brown. Remove from the oil and keep aside.
  4. In a separate pan, heat 2 tablespoons of oil over medium heat. Add the mustard seeds and cumin seeds and let them sizzle for a few seconds. Add the curry leaves and green chilies and stir for a few more seconds.
  5. Add the fried vadas and stir. Cook for a few minutes until the vadas are heated through. Add the tamarind paste, sugar and salt and stir. Cook for a few more minutes until the chutney thickens.
  6. Remove from heat and serve the batata vada chutney with the deep-fried vadas.
