Ingredients
For the pastry:
- 225g/8oz plain flour
- 110g/4oz butter, diced
- 1 egg, beaten
- 2-3 tablespoons cold water
For the filling:
- 25g/1oz butter
- 1 onion, finely chopped
- 2 leeks, sliced
- 1 garlic clove, crushed
- 400g/14oz cooked chicken, diced
- 2 tablespoons plain flour
- 300ml/10fl oz chicken stock
- 3 tablespoons crème fraîche
- 2 tablespoons chopped fresh parsley
- Salt and freshly ground black pepper
Instructions
1. Preheat the oven to 200C/400F/Gas 6.
2. To make the pastry, sift the flour into a bowl and rub in the butter until the mixture resembles breadcrumbs. Add the egg and enough cold water to form a dough. Roll out on a lightly floured surface and use to line a 20cm/8in loose-bottomed cake tin.
3. For the filling, melt the butter in a pan, add the onion and leeks and fry for 3-4 minutes until softened. Add the garlic, chicken and flour and fry for a further 1-2 minutes. Stir in the stock, crème fraîche and parsley and season, to taste, with salt and pepper. Bring to the boil, then reduce the heat and simmer for 5-6 minutes.
4. Pour the mixture into the pastry case and brush the edges of the pastry with beaten egg. Roll out the remaining pastry and use to cover the pie. Trim the edges and crimp to seal. Brush with beaten egg and make a small hole in the centre of the pastry lid to allow steam to escape. Bake in the oven for 25-30 minutes until golden-brown and crisp.
