1. Preheat the oven to 200C/400F/Gas 6.

2. To make the pastry, sift the flour into a bowl and rub in the butter until the mixture resembles breadcrumbs. Add the egg and enough cold water to form a dough. Roll out on a lightly floured surface and use to line a 20cm/8in loose-bottomed cake tin.

3. For the filling, melt the butter in a pan, add the onion and leeks and fry for 3-4 minutes until softened. Add the garlic, chicken and flour and fry for a further 1-2 minutes. 4. Pour the mixture into the pastry case and brush the edges of the pastry with beaten egg. Roll out the remaining pastry and use to cover the pie. Trim the edges and crimp to seal. Brush with beaten egg and make a small hole in the centre of the pastry lid to allow steam to escape. Bake in the oven for 25-30 minutes until golden-brown and crisp.
