Ingredients

  • 1/4 cup freshly grated Parmesan cheese
  • 1/4 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup cold butter, cut into small cubes
  • 1 egg, lightly beaten
  • 1/4 cup cold water

Instructions

Filling

Heat the olive oil in a large skillet over medium-high heat. Add the onion and garlic and cook, stirring frequently, until the onion is softened and lightly browned, about 5 minutes. Add the thyme, flour, chicken stock, white wine, black pepper, and nutmeg and stir until a thick sauce forms. Add the chicken, mushrooms, peas, parsley, and Parmesan and stir until everything is combined. Taste for seasoning and adjust if necessary. Remove from the heat and set aside.

Crust

In a medium bowl, whisk together the flour, salt, baking powder, and butter until it forms a crumbly mixture. Add the egg and water and stir until a dough forms. Turn the dough out onto a lightly floured surface and knead until it is smooth, about 2 minutes. Roll the dough out into a 12-inch circle. Grease a 9-inch pie plate and place the dough in the plate. Trim the edges of the dough, leaving a 1-inch overhang. Fold the overhang under and crimp the edges.

Assembly and Baking

Preheat the oven to 375 degrees Fahrenheit. Spoon the chicken and mushroom mixture into the prepared pie crust. Roll out the remaining dough into a 12-inch circle. Place it on top of the filling and trim the edges, leaving a 1-inch overhang. Fold the edges of the top and bottom crusts together and crimp. Cut a few vents in the top crust and brush with the remaining egg. Bake for 30 to 35 minutes, or until the crust is golden brown and the filling is bubbly.
