      Ingredients

      • 1 large stalk of celery, diced
      • 1 can of diced tomatoes
      • 1 cup of vegetable broth
      • 1 teaspoon of dried oregano
      • 1 teaspoon of dried thyme
      • 1 teaspoon of dried basil
      • Salt and pepper to taste

      Instructions

      1. Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion, garlic, carrot, and celery and cook until the vegetables are just beginning to soften, about 5 minutes.
      2. Add the drained lentils and stir to combine. Cook for an additional 3 minutes, stirring occasionally.
      3. Add the can of diced tomatoes and the vegetable broth and stir to combine. Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes, stirring occasionally.
      4. Add the oregano, thyme, basil, salt, and pepper to the pot and stir to combine. Simmer for an additional 10 minutes, stirring occasionally.
      5. Remove the pot from the heat and let the sauce cool completely. Once cooled, transfer the sauce to an airtight container and store in the refrigerator for up to 5 days, or freeze for up to 3 months.
