- 1 cup of dried green or brown lentils, rinsed and soaked
- 2 tablespoons of olive oil
- 1 small onion, chopped
- 2 cloves of garlic, minced
- 1 large carrot, diced
- 1 large stalk of celery, diced
- 1 can of diced tomatoes
- 1 cup of vegetable broth
- 1 teaspoon of dried oregano
- 1 teaspoon of dried thyme
- 1 teaspoon of dried basil
- Salt and pepper to taste
Instructions
- Heat the olive oil in a large pot or Dutch oven over medium heat. Add the onion, garlic, carrot, and celery and cook until the vegetables are just beginning to soften, about 5 minutes.
- Add the drained lentils and stir to combine. Cook for an additional 3 minutes, stirring occasionally.
- Add the can of diced tomatoes and the vegetable broth and stir to combine. Bring the mixture to a boil, then reduce the heat to low and simmer for 20 minutes, stirring occasionally.
- Add the oregano, thyme, basil, salt, and pepper to the pot and stir to combine. Simmer for an additional 10 minutes, stirring occasionally.
- Remove the pot from the heat and let the sauce cool completely. Once cooled, transfer the sauce to an airtight container and store in the refrigerator for up to 5 days, or freeze for up to 3 months.
