Instructions
1. Turn on your Instant Pot and press the “Sauté” button. Add the olive oil and wait for it to heat up.
2. Add the cubed chicken and cook for 3-4 minutes, stirring occasionally, until lightly browned.
3. Add the onion, garlic, ginger, garam masala, cumin, turmeric, paprika, coriander, cardamom, salt, cinnamon and black pepper. Cook for 1-2 minutes, stirring frequently.
4. Add the diced tomatoes, tomato sauce, and ¼ cup of water. Stir to combine.
5. Close the lid, making sure the vent is set to “Sealing”. Press the “Manual” or “Pressure Cook” button and set the timer to 8 minutes.
6. When finished cooking, turn the vent to “Venting” to release the pressure.
7. Open the lid and stir in the heavy cream and butter.
8. Serve over hot cooked rice or quinoa.
