Potato and leek soup is one of my favorite soups and one of the most comforting dishes I can think of. It's rich, creamy, and incredibly flavorful, making it perfect for a cold winter's day. Plus, it's incredibly easy to make and doesn't require a lot of ingredients or time. Here's how to make the best potato and leek soup recipe.
Ingredients
- 4 potatoes, peeled and diced
- 2 leeks, chopped
- 1 onion, diced
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 4 cups of vegetable broth
- 1 teaspoon of fresh thyme leaves
- Salt and pepper to taste
- Optional: Toppings such as bacon, chives, and sour cream
Instructions
In a large pot, heat the olive oil over medium heat. When the oil is hot, add the onion and garlic and cook until the onion is translucent. Add the leeks and potatoes and sauté for a few minutes until the potatoes are lightly browned. Pour in the vegetable broth, cover the pot, and bring to a boil. Once boiling, reduce heat to low and simmer for 25-30 minutes or until the potatoes are tender.
Remove the pot from the heat and use an immersion blender to puree the soup until it's smooth. Alternatively, you can transfer the soup to a blender and blend until smooth. Once pureed, return the soup to the pot and season with salt, pepper, and thyme. Simmer for an additional 10 minutes and then remove from the heat.
