Instructions

1. Heat oil in a large pan over medium heat. Add cumin seeds and let them sizzle for a few seconds. Then add coriander powder, turmeric powder, red chili powder, garam masala powder, and amchur powder. Stir for a few seconds until the spices are fragrant.

2. Add the potatoes, carrots, green peas, cauliflower, capsicum, and tomatoes. Stir to combine everything. Reduce the heat to low and cover the pan. Let the vegetables cook for about 10 minutes, stirring occasionally. Make sure the vegetables are cooked through but still firm.
