Instructions

Making Lao Gan Ma Mapo Tofu is very easy. Here’s how to make it:

  1. In a small bowl, combine the Lao Gan Ma chili sauce, light soy sauce, dark soy sauce, Chinese cooking wine, and sugar. Mix them together until the sugar has dissolved.
  2. Heat the vegetable oil in a wok over medium heat. Once the oil is hot, add the garlic, ginger, and white pepper. Stir-fry for about 30 seconds, until the garlic and ginger are fragrant.
  3. Add the fermented black beans and stir-fry for another 30 seconds. Then, add the tofu cubes and cook for another 1-2 minutes.
  4. Add the sauce mixture to the wok and stir to combine. Add the water and bring the mixture to a boil. Reduce the heat and simmer for about 5 minutes, until the sauce has thickened.
  5. Finally, add the green onions and stir to combine. Serve the Lao Gan Ma Mapo Tofu with steamed rice.
