Instructions

To begin, preheat the oven to 200°C and lightly grease a large pie dish. Heat the olive oil in a large frying pan over a medium heat. Add the leek, garlic, and smoked paprika, and cook for a few minutes until the leeks are softened. Pour in the white wine and chicken stock, and bring to the boil. Add the diced chicken and stir in the flour until everything is combined. Simmer for 5 minutes, then season with salt and pepper, to taste.

Next, spoon the chicken and leek mixture into the pie dish. Roll out the puff pastry and place on top of the pie filling. Crimp the edges of the pastry together and make a few slits in the top of the pastry to allow the steam to escape. Brush the top of the pastry with the beaten egg and bake for 25 minutes, or until the pastry is golden-brown and crisp.
