- 2 tablespoons tamarind chutney
- 2 tablespoons chopped ginger

Instructions



To make the vadas, start by soaking the urad dal in a bowl of water for 4-5 hours. Once the dal has softened, drain the water and transfer the dal to a food processor. Add the ginger paste, cumin seeds, green chillies, and salt to the dal and process until it forms a smooth paste.

Next, heat the oil in a deep-fryer or deep-sided pan to 375 F. Using your hands, shape the dal mixture into golf-ball sized balls and carefully drop them into the hot oil. Fry the vadas until golden brown, about 4-5 minutes. Remove the vadas from the oil and drain them on a paper towel-lined plate.

Next, make the yogurt sauce. In a medium bowl, combine the yogurt, ground cumin, ground coriander, chaat masala, black salt, cilantro, mint, red chilli powder, tamarind chutney, and chopped ginger. Mix until everything is fully combined.

To assemble the dahi vada, place the fried vadas in a serving bowl and pour the yogurt sauce over them. Serve immediately and enjoy!
