Vegetarian Cornish Pasty Recipe BBC

Ingredients

  • 1 sheet of ready-made puff pastry
  • 1 small onion, finely chopped
  • 1 red pepper, deseeded and diced
  • 1 carrot, peeled and diced
  • 1 celery stick, finely chopped
  • 100g mushrooms, sliced
  • 1 garlic clove, finely chopped
  • 2 tablespoons of olive oil
  • 100g mature cheddar cheese, grated
  • 1 teaspoon of dried oregano
  • Salt and freshly ground black pepper, to taste

Instructions

Preheat the oven to 200C/400F/Gas 6. Grease a baking sheet and set aside.

Heat the olive oil in a large skillet over medium heat. Add the onion, red pepper, carrot, celery, mushrooms and garlic and cook, stirring occasionally, for about 5 minutes until the vegetables are softened.

Remove from the heat and stir in the cheese, oregano, salt and pepper. Set aside to cool for a few minutes.

Unroll the pastry sheet onto a lightly floured surface and cut out four 10cm/4in circles. Divide the cooled vegetable mixture between the circles, spooning it into the centre of each one.

Brush the edges of the circles with a little water and fold the pastry over the filling, pressing the edges together to seal. Place the pasties onto the prepared baking sheet and brush the top with a little more water.

Bake in the preheated oven for 20 minutes until golden brown and crisp.
