  • 175 g butter
  • 300 g soft dark brown sugar
  • 125 ml double cream

Instructions

Making Sticky Toffee Pudding may seem daunting, but it's actually quite simple. Here's how to make this classic British dessert:

  1. Preheat your oven to 180°C (350°F). Grease a 20 cm (8 inch) round baking tin and line it with baking parchment.
  2. In a medium bowl, combine the chopped dates and cold tea and set aside for at least 15 minutes.
  3. In a large bowl, beat together the melted butter, caster sugar, and eggs until well combined. Add the date and tea mixture and stir until combined.
  4. Sift the self-raising flour and baking powder into the mixture and fold in until just combined. Add the vanilla extract and stir until just combined.
  5. Pour the mixture into the prepared tin and bake in the preheated oven for 25-30 minutes, or until a skewer comes out clean when inserted into the centre of the pudding.
  6. Whilst the pudding is baking, make the toffee sauce. In a medium saucepan, melt the butter over a medium heat before adding the dark brown sugar and double cream. Stir until the sugar has melted and the sauce is smooth. Simmer for 5 minutes before removing from the heat.
  7. Once the pudding is cooked, remove from the oven and leave to cool for 10 minutes before pouring over the toffee sauce. Serve warm with cream, ice cream, or custard.
