Instructions
Preparing the Cake
Begin by preheating your oven to 350°F and greasing two 8-inch round cake pans. In a medium bowl, sift together the all-purpose flour, baking powder, baking soda, and salt. Set aside.
In the bowl of a stand mixer, combine the granulated sugar and softened butter. Beat on medium-high speed for about 3 minutes, until light and fluffy. Add in the eggs, one at a time, beating until well incorporated. Add in the vanilla extract and ground cinnamon and mix until combined.
Lower the mixer speed to low and add in the flour mixture, alternating with the milk. Mix until just combined. Divide the batter evenly between the two cake pans and bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.
Making the Frosting
While the cake is baking, make the cream cheese frosting. In the bowl of a stand mixer, combine the softened cream cheese and butter. Beat on medium-high speed until light and fluffy. Add in the powdered sugar, one cup at a time, beating until well incorporated. Add in the vanilla extract and mix until combined.
Once the cake has finished baking, let it cool completely before frosting. To assemble the cake, place one of the layers on a cake stand or plate. Spread a generous amount of frosting over the top and then place the second layer on top. Spread the remaining frosting over the top and sides of the cake. Decorate with festive sprinkles, if desired.
