Ingredients:

This delicious vegetarian biryani is a perfect one-pot meal to enjoy on any day of the week! To make it, you will need:

  • 1 cup uncooked basmati rice
  • 1 can diced tomatoes
  • 1/2 cup frozen peas
  • 1/2 cup frozen carrots
  • 1/2 cup frozen corn
  • 1/2 cup vegetable broth
  • Salt and pepper to taste
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup chopped almonds

Instructions:

Getting started is easy! Begin by setting your Instant Pot to the sauté setting. Add the coconut oil, onion, garlic, ginger, garam masala, cumin, coriander, turmeric, and cayenne pepper. Cook for 3-5 minutes, stirring often, until the vegetables are softened.

Next, add the rice, diced tomatoes, peas, carrots, corn, broth, and a pinch of salt and pepper. Stir everything together to combine. Place the lid on the Instant Pot and set the valve to sealing. Press the manual setting and cook on high pressure for 5 minutes.

Once the cooking time is complete, allow the pot to naturally release pressure for 5 minutes. Then, carefully quick-release any remaining pressure. Remove the lid and fluff the biryani with a fork. Stir in the cilantro and almonds. Serve hot and enjoy!
