  2. Add the peppers (if using), thyme, paprika, curry powder and cumin. Cook, stirring often, for another 2 minutes.
  3. Add the tomatoes, chicken stock (or water), and salt. Bring to a simmer and cook for 5 minutes.
  4. Add the rice and stir to combine. Reduce the heat to low, cover the pot and cook for 20 minutes.
  5. Remove from the heat and let sit, covered, for 10 minutes. Fluff with a fork, stir in the parsley and serve.
