Mumbai street vada pav is a popular street food from India. It is a simple yet delicious dish made with potatoes, spices, and a special vada pav chutney. Ingredients

  • Potatoes – 2 large, boiled, peeled and diced
  • Mustard seeds – 1 teaspoon
  • Cumin seeds – 1 teaspoon
  • Asafoetida – a pinch
  • Curry leaves – 1 sprig
  • Green chilli – 1, finely chopped
  • Ginger garlic paste – 1 teaspoon
  • Red chilli powder – 1 teaspoon
  • Coriander powder – 1 teaspoon
  • Turmeric powder – 1 teaspoon
  • Garam masala – 1 teaspoon
  • Coriander leaves – 1 tablespoon, chopped
  • Salt – to taste
  • Oil – 2 tablespoons
  • Vada pav chutney – as required
  • Vada pav – 4
  • Fried green chilli – 4

Instructions

Heat oil in a pan over medium heat. Add mustard seeds, cumin seeds, asafoetida, curry leaves, and green chilli. Fry for a few seconds until the mustard seeds begin to splutter. Add ginger garlic paste and fry for a few more seconds.

Add red chilli powder, coriander powder, turmeric powder, and garam masala. Fry for a few more seconds until the spices are fragrant. Add the diced potatoes and mix well. Fry for a few minutes until the potatoes are cooked.

Add salt to taste, coriander leaves, and mix everything together. Turn off the heat and set aside. To assemble the vada pav, take a vada pav and spread some vada pav chutney on it. Place a portion of the potato mixture on top. Garnish with a fried green chilli.

Repeat with the remaining vada pavs. Serve hot with more vada pav chutney on the side. Enjoy!
