1 large onion, diced

1 teaspoon sugar

Salt to taste

2-3 cups water

1 tablespoon chopped cilantro, for garnish

Instructions

1. Rinse the black lentils in a bowl of water and let them soak for at least 30 minutes. Drain and set aside.

2. Heat the oil in a pressure cooker over medium-high heat. Add the cumin seeds and mustard seeds and let them sizzle for a few seconds. Add the diced onion and garlic and sauté until the onion is lightly browned.

3. Add the ginger-garlic paste, coriander powder, red chilli powder, garam masala, and turmeric powder. Sauté for a few seconds, stirring constantly.

4. Add the soaked black lentils and stir to coat in the spices. Add the bay leaves, green chillies, sugar, and salt. Stir to combine.

5. Add 2-3 cups of water, depending on how thick you like your dal. Cover and pressure cook on high for 4-5 whistles, or until the lentils are soft and creamy.

6. Once the pressure has released, open the lid and garnish with chopped cilantro. Serve hot with steamed basmati rice or your favorite Indian bread.
